1. Pão de Queijo Mineiro
A classic of Brazilian gourmet cuisine, crispy on the outside and soft on the inside. Perfect for breakfast or an afternoon snack, this treat delights generation after generation.
Yield: approximately 30 small rolls

Ingredients

250 g of Polvilho Azedo Yoki

250 g of Polvilho Doce Yoki

200 ml of milk
-
100 ml of oil
-
2 eggs
-
200 g of semi-cured cheese or grated Parmesan

Salt to taste
Method

Heat the milk with the oil and a pinch of salt until boiling.

Scald the cassava starches with this mixture, stirring well.

Once slightly cooled, add the eggs and grated cheese.

Mix until a smooth dough forms.

Shape into small balls and bake in a preheated oven at 180 °C for approximately 25 minutes.
2. Sweet Couscous
Delicate and flavoursome, sweet couscous is a traditional dessert that charms with its gentle flavour and soft texture. Prepared with premium ingredients, it is ideal for sweetening family gatherings.
Yield: 8 portions

2 cups of Flocão de Milho Yoki

1 ½ cups of coconut milk

1 ½ cups of sugar

1 cup of desiccated coconut

1 pinch of salt
Method

Mix the corn flakes with the coconut milk, sugar, desiccated coconut and salt.

Leave to rest for 10 minutes to hydrate.

Place in a steamer and cook over steam for 20 minutes.

Allow to cool slightly, turn out of the mould and serve sprinkled with extra desiccated coconut.
3. Creamy Corn Cake (Bolo de Fubá)
A classic sweet that brings warmth and evokes the feeling of grandma’s kitchen. Its well-balanced flavour is a true celebration of Brazilian taste.
Yield: 10 to 12 portions

1 cup of sugar

3 eggs

2 cups of milk

1 tablespoon of butter

1 cup of grated cheese (optional, to intensify the flavour)

Method

Blend the eggs, milk, sugar, butter and corn flakes in a blender.

Add the baking powder and fold in gently.

Pour into a greased and floured tin.

Bake in a preheated oven at 180 °C for approximately 40 minutes or until golden.
4. Traditional Farofa
An essential accompaniment to barbecue and feijoada, farofa is one of those distinctive food staples that makes any meal extra special. You can also add eggs, bacon strips or pieces of sausage to enhance the flavour.

Method
