How to Prepare — Traditional Method
Ingredients (4 servings):
- 240g Combrasil Carioca Beans (4 servings of 60g raw)
- 720ml water (1:3 ratio)
- Salt to taste
- Garlic and onion for seasoning
Pressure Cooker Method (Recommended):
- Pre-soak — Place the beans in a bowl covered with water for 4–8 hours (or overnight). This reduces cooking time and aids digestion.
- Drain and rinse — Discard the soaking water. Rinse under cold running water.
- Pressure cook — Place beans in the pressure cooker with water (1:3 ratio). Once pressure is reached, cook for 20–25 minutes over a medium heat.
- Natural pressure release — Do not force the steam out. Allow the pressure to drop naturally (~10 minutes).
- Season — Fry chopped garlic and onion in olive oil. Add 1–2 ladles of beans, lightly mash, and stir back into the pot. Adjust salt.
- Adjust the broth — Ideal broth: thick and creamy. If too watery, simmer uncovered to reduce. If too dry, add warm water.
Hob Method: Steps 1–2: Same as above. 3. Cook for 1h30–2h over a medium heat, ensuring the beans remain covered with water at all times. 4. Beans are ready when they crush easily between two fingers. Steps 5–6: Same as above.
Tip: Replace some of the water with vegetable or meat stock for extra depth of flavour.
